Healthified Southern Peach Cobbler

OMG....I love peach cobbler and ice cream. The crusty corner piece with the warm sticky peaches that melts the ice cream.....deep breath....YUM! One of my best friends from LA, Marilyn, could make the best peach cobbler ever! I tried a few times in the past and it turned out just OK. My sister-in-law Karen shared an easy recipe with me and it is delicious but not so healthy. I made this Saturday morning before coming to class - it was very easy. Everyone loved it! Most of them said they couldn't taste the difference...and I must agree. I took what was left home and my husband finished it by Sunday afternoon with Bluebell Homemade Vanilla Ice Cream of course. 



Healthified Peach Cobbler

Ingredients

cup Bisquick Heart Smart® mix
1/4 
teaspoon ground cinnamon
cup fat-free (skim) milk
tablespoons canola oil
3/4 
cup sugar
can (29 oz) peach slices in light syrup, drained
teaspoon lemon juice
Vanilla reduced-fat ice cream, if desired

Directions

  • Step1Heat oven to 375°F. In ungreased 8-inch square (2-quart) glass baking dish, stir Bisquick mix and cinnamon. Stir in milk and oil with wire whisk or fork until blended.
  • Step2In medium bowl, mix sugar, peaches and lemon juice. Spoon over batter in baking dish.
  • Step3Bake 50 to 55 minutes or until golden brown. Let stand about 20 minutes before serving. Serve warm with ice cream....low fat or no sugar of course.
