Apple and Caramel Bread Pudding

Since I've lived here in Bama I have come to love Bread Pudding. I don't remember Mamee or Coot making this when I was younger but it wasn't a favorite. My mother-in-law, Jessie Ellis is known for her bread pudding...and even though it took me a minute before I would even try it, when I finally did I found that it was delicious. I guess I have acquired a taste for it. There are so many different ways to make bread pudding. I have made a breakfast bread pudding with a praline sauce for my book club that was delicious but not healthy. I'm a lover of caramel apple anything so I thought this would be good...I will be trying this one.





Soymilk and fat-free ingredients offer a twist to delicious bread pudding.

Total Time:50 Minutes
Makes: 8 servings

1 cup unsweetened applesauce

1 cup vanilla soymilk

1/2 cup fat-free egg product

1/4 cup packed brown sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla

5 cups 1-inch cubes French bread

3 tablespoons sliced almonds

1/4 cup caramel fat-free topping, heated


Heat oven to 350°F. Spray 9-inch quiche dish or pie plate with cooking spray.
In large bowl, mix all ingredients except bread, almonds and caramel topping with wire whisk until smooth. Fold in bread. Pour into quiche dish; sprinkle with almonds.
Bake 30 to 35 minutes or until golden brown and set. Cut into wedges. Drizzle caramel topping over each serving.

Bread pudding made with a bread that's too soft can be very soft and almost mushy. Gently squeeze bread loaves to choose the one that has some resistance and doesn't feel like a marshmallow!
