Breakfast ideas
About a month
ago, my husband went to the doctor and was told his blood pressure was still
too high with medication. He was told
that in addition to medication, he needed to lose weight and control his sodium
intake. He asked for my help.
The challenge
My husband’s
idea of a great meal is grits, eggs, sausage and biscuit for breakfast and
meatloaf and mashed potatoes or rice and gravy for lunch and dinner. Not to mention
he works 12:00 midnight until 12:00 pm.
I work 8:00 to 5:00, which means I had to
create healthy portable meals that are easily accessible for him to enjoy in advance.
Let me share a
few of my breakfast ideas:
Egg muffin cups
Recipe
* 12 slices of deli ham
* 1 cup of shredded cheese
* 1/2 cup of diced tomatoes, spinach mushrooms, diced green onions or any vegetables of your choice
* 1 small carton of egg whites or 11- 12 whole eggs beaten
Layer ingredients as shown in a greased muffin pan. Bake for 20-25 minutes depending on how you like your eggs.
Egg McMuffin with Canadian bacon
Recipe
6 Thomas Light and Healthy English Muffins
6 slices of Canadian bacon
1/2 carton of egg whites
6 slices of all natural cheese
Cook egg whites in 1 Tablespoon of olive or canola oil and divide among each muffin; assemble other ingredients.
Chocolate Protein Shake
Recipe
Chocolate Peanut Butter
1 cup of unsweetened vanilla almond milk
1 scoop of chocolate protein powder
2 Tablespoons of natural peanut butter
5 cubes of ice
Blend well and Enjoy!
Variations
Chocolate strawberry
Add 1 cup of frozen strawberries instead of peanut butter.
Chunky Monkey
Add 1/2 frozen banana.
