Easy Pot Roast and Veggies

My husband is a meat and potatoes man so he loves it when I cook things like pot roast. Talk about quick easy and delicious...this recipe is worth every minute it takes to prepare it. The roast is tender and full of flavor. I served it over brown rice with sweet peas but it would be great over mashed potatoes or sliced for sandwiches.
